Champignon mushrooms and baked potatoes are a very simple recipe for a very tasty and versatile side dish.

 

Ingredients for people 4

> 600 g of potatoes;
> 400 g of champignon mushrooms;
> 1 clove of garlic;
> breadcrumbs;
> extra virgin olive oil;
> sale.

 

Preparation

Boil the potatoes for 10/15 minutes. Meanwhile, clean the mushrooms and sauté them in a pan with a clove of garlic and a drizzle of oil. Cover and cook over very low heat for about 5 minutes, they must remain firm; season with salt.


Peel the potatoes, cut them into slices and add the salt. Grease a baking dish with oil, cover the bottom with breadcrumbs, pour in the potatoes and champignon mushrooms, cover with breadcrumbs, add a drizzle of oil. Bake in the oven at 180 degrees for about 20 minutes.

Ingredients for people 4

> 400 g of champignon mushrooms;
> 320 g of spaghetti (preferably wholemeal);
> 1 clove of garlic;
> 1/2 glass of white wine;
> sale;
> extra virgin olive oil;
> pepe;
> fresh parsley;
> parmesan.


 

Preparation

Clean the champignon mushrooms and cut them into thin slices. Sauté them in a pan with a clove of garlic, deglaze with the white wine, evaporate, cover and cook over low heat until the desired degree of cooking is obtained, i.e. more al dente and crunchy or more cooked and soft, according to taste. . Meantime, boil the salted water and, when the mushrooms are almost cooked, drop the spaghetti.

Drain the pasta and toss in a pan with the mushrooms. Add a sprinkling of pepper, fresh parsley and a handful of Parmesan.
