Plumcake with chocolate chips (traditional and vegan recipe)

Usually this dessert is enriched with chocolate chips or, alternatively, with raisins. Here's how to prepare a plum cake with chocolate chips according to the traditional recipe and in a vegan version. Choose organic ingredients as much as possible.



Traditional recipe

250 grams of spelled flour
250 gr of white yogurt
100 gr of whole cane sugar
50 ml of extra virgin olive oil
50 gr of chocolate chips
50 ml of milk or water
3 small eggs
1 sachet of baking powder for cakes
1 pinch of cinnamon

In a large bowl, break the eggs and beat them with a whisk. Add the brown sugar and yogurt, continuing to mix. Then add the oil and milk (you can use plain fresh water instead of milk, if you don't have it available). Gradually pour in the flour and mix with the spoon. If necessary, add a little more milk or water. Finally add the yeast, cinnamon and chocolate chips. Make the dough very homogeneous and pour it into a plum cake pan. Bake your chocolate chip plumcake in a preheated oven at 180 ° for 35-40 minutes.

Vegan recipe

250 grams of spelled flour
250 gr of vegetable yogurt
150 ml of soy or rice milk
100 gr of whole cane sugar
50 gr of dark chocolate chips
2 tablespoons of extra virgin olive oil
1 sachet of baking powder for cakes
1 pinch of ground cinnamon



Pour the yogurt, oil and vegetable milk into a bowl and mix them with a whisk. Add the brown sugar and continue mixing. Then gradually pour in the flour and mix the ingredients with a spoon. If needed, add a little more vegetable milkand, to obtain a creamy, not too liquid mixture. Finally pour the baking powder into the dough, the dark chocolate chips and a pinch of cinnamon. Pour everything into a loaf pan. Cook the plum cake with chocolate chips in vegan version in a preheated oven at 180 ° C per 35-40 minutesi.
