To prepare vegan coconut-based cream, it is always better to opt for an organic, cold-pressed coconut oil, avoiding the hydrogenated one. For a good result coconut oil needs to be solid. In fact, at a temperature of about 24 ° C, this takes on a liquid consistency. Therefore, to work it you have to let it solidify at a temperature below 15 ° C. If it's very hot, just put it in a jar and keep it in the fridge for a few hours.

When the coconut oil has solidified, almost like butter, transfer it to a large bowl and use an electric mixer, setting the maximum speed, for about 10 minutes. Gradually you will notice that the coconut oil, incorporating air, will turn into a kind of whipped cream that you can use for your desserts.

Coconut milk is also perfect for making a totally vegan cream. Preparing it is very simple. Just put the coconut can in the fridge for at least 12 hours or about 3 hours in the freezer. When the coconut milk has cooled down sufficiently, open the can and remove the top (thicker and creamier). Transfer it to a bowl and whisk it with an electric mixer for a few minutes until it has the consistency you want. If you prefer, you can add a little icing sugar. You just have to keep it in the refrigerator or use it immediately to prepare a nice tiramisu or a vegan cake.
