Vegan desserts: candied citron muffins

You are looking for one tasty snack that doesn't make you feel too guilty about the calories you eat? Here is a recipe for you: mini vegan muffins filled with candied citron peel!


It is not a light dessert, but given the small size of the muffins, eating 3 or 4 will certainly not be a mortal sin!

Ingredients for about 30 muffins:

  • 300 g of 00 flour
  • soya milk vanilla-flavoured
  • 150 g of vegetable butter (or 100 g of corn oil)
  • 80 g of sugar
  • 2 teaspoons of baking powder
  • 1 and a half teaspoons of baking soda
  • 200 g of candied citron peel
  • 30 mini cups

 


Preparation

In a bowl, combine all the powdered ingredients: the sifted flour, sugar, baking powder and baking soda, mix and set aside.
Then, in another bowl, pour the milk and melted butter in a bain-marie, mix and add - little by little - the mixture of flour and yeast that you have prepared, turn with a whisk to dissolve any lumps and proceed until when you have not combined and mixed evenly all the ingredients.


Once you have a soft dough (similar to that of crepes) add the cedar peels and mix again to distribute them evenly.


At this point, turn on the oven to 200 degrees, then take a low and wide pan, arrange the cups and with a spoon gently pour the mixture into the 25-30 paper containers, taking care not to dirty the edges too much (if necessary remove the paste poured with a damp sponge).


When finished, bake for 15 minutes, and when the muffins are golden brown, always do the classic toothpick test: insert a toothpick in the center of a mini muffin, if it comes out dry your sweets will be ready, but if the wood is damp there it will take a few more minutes.


When cooked, take out of the oven and let it cool!
