PURPLE-BLUE FOODS: aubergines, radicchio, black grapes, berries (currants, blackberries, raspberries, blueberries ...), plums and figs.


Properties of Violet-Blue Vegetables

Violet / blue vegetables and fruits are important for health, as they reduce the risk of cardiovascular diseases and tumors; these foods also contain substances that are important for urinary function, sight and the structure of blood capillaries. Plus, all purple fruits and vegetables are high in fiber.
The characteristic phytochemicals for this food group are anthocyanins and carotenoids.
Anthocyanins, which have a high antioxidant power, prevent atherosclerosis caused by high blood cholesterol levels, urinary tract infections (especially berries), improve visual function, inhibit platelet aggregation, increase resistance capillary (especially berries) and are therefore useful against blood circulation pathologies.
Carotenoids, on the other hand, prevent many types of cancer, cataracts, skin aging, neurodegenerative diseases and cardiovascular diseases.

Purple-blue recipes

Mixed berries flan

Ingredients for 4 people)

  • 500 g of mixed berries (choose from blueberries, currants, blackberries, raspberries, etc .;
  • 150 g of flour;
  • 100 g of butter;
  • 60 g of butter;
  • 1 lemon;
  • cinnamon powder.

Preparation

Wash and dry the berries.
Grease an ovenproof dish in which to evenly arrange these fruits, the juice of half a lemon and a little cinnamon.
In a bowl, mix the butter (cut into cubes), sugar and flour. Pour this mixture on a regular basis over the berries.
Bake in a preheated oven (220 degrees), until the surface turns golden (about 25 minutes).

Radicchio with sultanas

Ingredients for 4 people)

  • 100 g of black olives;
  • 8 anchovy fillets in oil;
  • 8 heads of Treviso radicchio;
  • Pine nuts;
  • sultana raisins;
  • extra virgin olive oil;
  • salt and pepper.

Preparation

Carefully wash the radicchio and cut the tufts into four parts, which you will place in a pan with 5 tablespoons of oil, salt and raisins; cover with water and cook with the lid on over low heat for about 30 minutes.
Once the radicchio is cooked, sprinkle with the pitted olives and anchovies; then evaporate the remaining cooking liquid.
On the plate, season with pepper and garnish with pine nuts.

Ingredients for 4 people)

  • 2 peaches;
  • 500 g of blackberries;
  • 500 g of raspberries;
  • 1 lemon,
  • a few mint leaves,
  • 1 glass of sparkling water.

Preparation

Wash the fruit and spin it; now add the juice of a lemon and a glass of sparkling water. Garnish with some mint leaves.

Summer Centrifugate 2 (restorative at any time of the day)

Ingredients for 4 people)

  • 6 figs;
  • My 2,
  • 2 bunches of black grapes;
  • 1 pinch of cinnamon.

Preparation

Wash the grapes. Peel the apples and figs, centrifuging everything together with the grapes.
Serve with a pinch of cinnamon.

  • 12 plums;
  • 4 peaches;
  • 2 mele;
  • 1 lemon.

Preparation

Peel the plums, peaches and apples, then centrifuge them. Garnish with a slice of lemon.
