Nutritional Characteristics

Almost all slimming diets require a limited consumption of bread. In fact, this food has a medium-high caloric content (in 100 grams of bread there are about 275 Kcal, 75 less than an equal quantity of pasta).


The excess of calories is not due to the presence of fats (actually almost absent) but to the important carbohydrate content (about 63%).


Eating too many carbohydrates, in addition to raising the calorie content, alters the optimal balance of the meal. For example, if you consume 200 grams of bread, to respect the correct distribution of calories between the various macronutrients, you need to add about 150 grams of chicken breast and 20 grams of olive oil.




Ingredients

Water 350 cc., White flour type 00 350 g, whey protein (or soy) 150 g, a teaspoon of salt, a tablespoon of sugar or fructose, a cube of natural yeast (crumble it well), 25 grams of sesame seeds.

Preparation

Dissolve the yeast in a little water, subtracting it from the total to be used. Carefully mix the various ingredients by adding water and flour a little at a time until the mixture is homogeneous, free of lumps. Place the dough in a bowl, cover it with a cloth and a cover and let it rise for at least two hours (until it has doubled in volume). Once it has risen, knead again to give the mixture the desired shape, spread everything on a baking dish greased with oil and sprinkle the remaining sesame seeds. Bake in the oven at 180 ° C for about an hour.



NOTE:


The ideal is to choose proteins with a neutral taste; to avoid vanilla, chocolate, strawberry and similar flavored proteins.

Using egg proteins you will obtain a more compact bread, more filling, but less digestible.

The choice of yeast is very important: using too little or poor quality makes the bread too hard and compact. With good yeast you get a truly palatable bread, the use of brewer's yeast is recommended, as long as it is fresh.
