200 gr of almond flour
70 gr of whole cane sugar
70 ml of water
2 tablespoons of potato starch or rice flour
2 tablespoons of extra virgin olive oil
1 teaspoon of grated lemon zest

To fill:

About 5 tablespoons of strawberry jam
1 spoon of lemon juice
Fresh strawberries

Preparation

Start preparing the strawberry tart from basis. In a large bowl pour the almond flour. Add the brown sugar, a teaspoon of grated lemon zest (remember to choose untreated lemons), two tablespoons of extra virgin olive oil and two tablespoons of potato starch or rice flour.

The potato starch and rice flour help to bind the dough and keep it soft during cooking. Gradually pour water at room temperature into the bowl and start kneading with your hands until you get a smooth and homogeneous mixture. If necessary, add a little more almond flour or rice flour. The dough must remain soft and easy to work and roll out.


Once the dough is ready, you can spread it directly into the pan of your choice. I used a 21 cm diameter round springform pan for pies. The advice is to grease both the bottom and the edges with a little oil. The tart will not stick to the mold e you will not have to use baking paper.


Roll out the dough very well on the bottom of the pan and form an edge as regular as possible - more or less thin - by pressing well with your fingers outwards. Prick the base with a fork so that it does not swell during cooking. Bake in the oven a 180 ° C for 20 minutes. When you take the tart out of the oven, it should still be soft enough to the touch.

Let the base of the tart cool. So make it with one organic strawberry jam or homemade. Cut the strawberries into thin slices and toss with the freshly squeezed lemon juice. Then arrange them as you like on the tart to create a decorative pattern. Keep the strawberry tart in the refrigerator until ready to serve.


It keeps cool without any problems for a day or two. This strawberry tart it is suitable for everyone, even for those who are vegan or must follow a gluten-free or dairy-free diet. If you want, you can replace the cane sugar with rice malt or agave syrup to sweeten the base of the tart, depending on your tastes and needs. The absence of gelatine allows you to enjoy strawberries in all their freshness. Serve the homemade strawberry tart as a snack or as a dessert.
