Ingredients:

Preparation: shell all the hazelnuts well, preheat the oven to 170 ° C, with a large baking pan inside. Then remove the pan and place the hazelnuts on it, without overlapping them. Bake and lower to 90 ° C, letting the hazelnuts cook for about 15 minutes and turning with a wooden spoon from time to time.

Then turn off the oven and let them cool inside for another 15 minutes. Then remove the pan from the oven and, when the hazelnuts are completely cold, remove the skin with the help of a small knife or by beating them together and rubbing them inside a cloth. They keep well in an airtight jar, stored in a dry place. In the absence of an oven, they can also be toasted in a non-stick pan, over medium-low heat and covered for about ten minutes, leaving them to rest for another 5 minutes before peeling them.

Recipe of caramelized hazelnuts

Ingredients:
> 2 cups of raw cane sugar,
> a cup of water,
> a couple of cups of roasted and peeled hazelnuts,
> a vanilla bean (optional)

Preparation: dissolve the sugar in a saucepan with the water over high heat. When the sugar is well dissolved, add the hazelnuts and let them boil until a thick, white foam forms. Then lower the heat to low and stir continuously, turning off the heat and adding some vanilla.

Stir again and after a few minutes remove the hazelnuts with a fork, placing them on a sheet of waxed paper to let them cool. When the sugar caramelizes and hardens well, they can be detached and stored in airtight glass jars ready to be eaten after returning from a good run.

Hazelnuts with chocolate pralines

Ingredients:
> 2 cups of raw cane sugar,
> a cup of water,
> a couple of cups of roasted and peeled hazelnuts,
> a bar of dark chocolate,
> cocoa amaro

Preparation: proceed as per the previous recipe, or dissolve the sugar in a saucepan with the water over high heat. When the sugar is well dissolved, add the hazelnuts and let them boil until a thick, white foam forms.

Then lower the heat to low and stir continuously. Turn off the heat and remove the hazelnuts one by one with a fork, dipping them in the bowl of dark chocolate, previously melted in a bain-marie, and immediately afterwards in the saucer of the cocoa powder, before placing them on baking paper to let them cool.
