The "Avocado pudding with ginger and lemon"

Ingredients for people 6:
> 2 avocado ripe organic,> 1 organic lemon,> 1 sheet of gelatin in sheets,> 20 grams of fresh organic ginger.

Method: soak the gelatine in cold water for about ten minutes. Grate the lemon zest and keep it.

Squeeze the lemon, warm the juice and half a glass of water in a saucepan and melt the gelatine in it.


Peel the avocado and blend it adding the lemon juice, the peeled fresh ginger already cut into strips, the grated lemon zest.


Pour into molds, leave to rest in the refrigerator for at least two or three hours, serve.

This version of the "pudding" is neutral, and can be used as accompaniment for different foods: it can be served with a few slices of smoked or fresh marinated salmon, with steamed prawns, with a selection of semi-aged cheeses ....

If you want a version to serve as a dessert, add 3 teaspoons of brown sugar or a teaspoon of stevia, for those who are attentive to calories.
