Curiosities about cabbages

  • The expression "Be born under a cabbage" it seems to be due to the emblematic value that the vegetable has in Nordic culture: it seems that once upon a time, in Scandinavian countries it was a tradition to give cabbages to newlyweds to be transplanted into pots to be placed on the roof, on the windowsills of the dormers. Thus the children, who at that time came into the world at home, on the conjugal bed, were literally born under the cabbages;

A recipe with cabbage

Here are the ingredients for a great one cabbage soup for 4 people:

  • 3 small cabbages,
  • 500 grams of wholemeal bread,
  • 250 grams of grated Parmesan cheese or Grana Padano,
  • 2 liters of water,
  • 4 tablespoons of olive oil and salt.

Method: wash the cabbages, taking care to choose the greenest leaves and to deprive them of the hardest ribs. Blanch them for a few minutes in a pan with boiling salted water, to attenuate the intensity of the flavor. Bring two and a half liters of salted water to a boil, add the cabbage and let it cook for about half an hour. After draining them, keep the cooking water. Arrange a layer of cabbage in a baking dish, alternating it with one of thin slices of bread and a sprinkling of cheese, and so on, smoke until you finish with the slices of bread garnished with grated cheese.

At this point, slowly pour the broth, so that it is well absorbed. Sprinkle with cheese and let a drizzle of oil flow. Cook on gas for a quarter of an hour, and complete with a short browning in the oven at 180 degrees. Bring to the table still steaming.
