Ingredients (for 4 people): 400 g of white chickpeas (if dry 280 g), 200 g of dried black chickpeas, 2 tablespoons of corn starch, 2 grapefruits (juice), 2 limes (juice), extra virgin olive oil , salt and pepper.

How to prepare it: if you use dried chickpeas, you must soak them overnight in plenty of water to drain and change before proceeding with cooking. You can soak the chickpeas with 2 strips of kombu seaweed to make them more digestible. Pour some extra virgin olive oil into a large non-stick pan with low sides. As soon as the oil has heated up, add the cooked chickpeas. Add the salt and let them toast. Then, pour the juice of the two citrus fruits and leave the chickpeas to flavor for a few minutes. How to prepare it: peel the beetroot, after having thoroughly washed it. With a fish knife cut it into 0,5 mm slices. Then, store them in a container with high sides. Grate the ginger. If it's organic, you can also use the peel. Once grated, squeeze the juice directly into the container where you placed the beetroot slices with your hand. Add a drizzle of extra virgin olive oil and salt and let it rest in the fridge for about half an hour. Meanwhile, cut the grapefruit into slices, removing the peel and season with salt and extra virgin olive oil. Finally, plate by placing a grapefruit slice on top of each beetroot slice. Before serving, add a little black pepper.

Ingredients (for 4 people): 1 kg of soy yogurt, 200 g of coconut milk, 5 tablespoons of rice / barley malt syrup or cane sugar, 1 grapefruit (juice), 2 tablespoons of corn starch, 2 ripe passion fruits, 5 g of agar agar (seaweed powder that can be bought in organic shops).

How to prepare it: put the soy yogurt, coconut milk and sweetener (4 of the 5 servings) in a saucepan with high sides and bring to a boil. Remove from the stove for 3 minutes, then return to the heat, adding the agar agar. Stir well for the powder to dissolve in the liquid and bring to a boil again. Let it rest for a few minutes. Take some aluminum cups and grease them with a thin layer of sunflower oil. With a ladle fill them with the mixture and put them in the refrigerator for 1 hour. Meanwhile, squeeze the grapefruit juice, take a milk frying pan and heat the juice by adding the cornstarch and sweetener. Turn everything over and cook for 5 minutes. Let it cool down to room temperature. Cut the passion fruit in half. Proceed to serve by removing the kanten from the cup and place it in a large bowl. Pour the grapefruit drawstring over it and add half of the passion fruit as decoration.
